Vegetable lasagna with cheese

Vegetable lasagna with cheese Lasagna is a type of pasta in form of sheets. Generally it is baked and layered with filling and sauces. Lasagna sheets are easily available in market and they are easy to prepare at home too. Different types of purees like tomato, spinach or carrot can be used to make lasagna. Filling can be of vegetables alone or vegetables and choice of meat or meat alone depending on one’s taste.

Vegetable Lasagna With Cheese

Preparation time: 20 to 30minutes
Cooking time: 1 ½ hours
Serves: 4 to 6


For Lasagna

1 packet ready made lasagna sheets
1 tablespoon oil
½ teaspoon salt
1 ½ lit water for boiling

For Red Sauce

1 large onion grated
3-4 cloves of garlic
2 tomatoes blanched and seedless
1 cup tomato puree
1 bay leaf
½ teaspoon red chilly powder
½ cup water
2 teaspoon mixed Italian herbs
1 teaspoon sugar
1 tablespoon olive oil
Salt to taste
½ teaspoon pepper

For White Sauce

1 table spoon butter
1 tablespoon plain flour
2 cups milk
1 cup fresh cream
½ cup grated processed cheese
½ teaspoon pepper
½ teaspoon salt

For Filling

1 large eggplant diced
1 zucchini cubed
½ red capsicum cubed
½ yellow capsicum cubed
8-10 mushrooms sliced
8-10 baby corn sliced
2 teaspoon chopped parsley
1 teaspoon chopped green chillies
1 teaspoon garlic paste
Salt to taste
1 tablespoon olive oil
½ teaspoon pepper
For garnish ½ cup grated processed cheese


1. Boil water in a large vessel and add salt and olive oil to it. Put the lasagna sheets in without breaking and boil till the sheets become soft and tender.

2. Drain the water and put the sheets in cold water till they cool off. Drain again. Rub a little oil and keep aside.

Red Sauce

1. In a pan heat the oil. Put the bay leaf, crushed garlic and onions and cook for 2 to 3 minutes till the onions become translucent.

2. Chop the blanched tomatoes and add them to the pan, cook for 5 minutes. Add tomato puree, red chili powder and mixed herbs and cook for 5 minutes.

3. Add water, sugar, salt and pepper and boil for 10 minutes till the sauce thickens.

White Sauce

1. Heat 1 tablespoon of butter in a pan. Add the flour and saute for a minute.

2. Add milk and cream little by little stirring continuously to avoid lumps. Bring to a boil. Add ½ cup cheese and cook till the cheese melts. Add salt and pepper.


1. Heat olive oil in a wok. Add crushed garlic and chopped green chillies and cook for a minute.

2. Add the vegetables and cook till they are tender and soft. Add chopped parsley, salt and pepper. Cook for one minute and switch off the flame.

3. Grease a baking dish. Spread one layer of lasagna sheets.

4. Put a layer of red sauce and then a layer of vegetables and white sauce. Repeat the layers and in the end sprinkle the grated cheese all over.

5. Preheat the oven at 200℃ for 10 minutes. Reduce the temperature to 170℃ and bake lasagna for 45 minutes till the cheese melts and turns a nice brown. Serve hot with toasted garlic bread easily available in the market or prepare it t home.
