Gelatin poke cake is a very unusual type of cake and it gets its name due to the streaks of gelatin liquid that flows down the holes made in the cake. The gelatin that remains in the cake stiffens on refrigerating, which makes the cake taste very different and tasty.
The gelatin streaks not only make the cake taste better but also make it appear more attractive than simple vanilla cake. Gelatin poke cake is preferred by both children and adults and hence it is a perfect choice for birthday parties and casual get-togethers. Apart from that, this cake can also be prepared ahead of time and served directly on the arrival of guests.

1 box of white cake mix
1 cup + ½ cup of cold water
1 cup of boiling water
3 large eggs
1 cup of cool whip whipped topping, thawed
½ cup of vegetable oil
1 package of strawberry or raspberry-flavored gelatin
1. Preheat your oven to 350 degrees Fahrenheit and then fetch a 9 ×13 inch baking pan. Smear the bottom and sides of baking pan with butter and then set it aside. After that, take a large mixing bowl and place it on your counter. Break open the eggs one by one and then transfer their contents to the mixing bowl. Whisk the eggs with the help of an electric blender and then add the vegetable oil. Whisk the mixture to combine the oil nicely with the eggs and then add 1/3rd part of the flour.
2. Incorporate the flour into the egg mixture and then add the remaining flour in two batches while whisking the mixture slowly and continuously. Once the entire flour is incorporated, add the water and whisk again. Whisk the batter until you no longer get any lumps in it and then pour the batter into the prepared baking pan. Scrape down the sides of the mixing bowl to extract as much batter as possible and then insert the baking pan into the preheated oven.
3. Bake the cake for 30-35 minutes or until a skewer comes out clean on inserting it in the middle part of the cake. Once ready, pull the baking pan out of the oven and then place it on a wire rack to cool it down. Let the pan sit on the wire rack for 10-15 minutes or until the cake is completely cooled. In the meantime, heat up water in an electric kettle. After that, take a bowl and pour the gelatin powder in it. Add the hot water to the gelatin powder and stir immediately to mix the powder with the hot water.
4. Once the cake cools down completely, remove it from the baking pan and then place it on a plate. After that, make medium sized holes in the cake with the tip of a skewer and then pour the gelatin solution evenly all over the cake. Once done, cover the cake and insert it into a refrigerator to chill it. Let the cake sit in the refrigerator for 2-3 hours and then take it out. Finally, take the whipped topping and spread it evenly on top of the cake. Once done, cut the cake into medium sized pieces to serve.
