Soak the almonds in water for 15 minutes. Cut the garlic and ginger into small pieces. Chop the onion into very small, fine pieces. Put the garlic, ginger, chillies and almonds in the mixer and prepare a smooth paste.
Wash the chicken thoroughly and cut into medium sized pieces. Place a heavy bottomed pot on the flame. Add ghee and let it heat for 1 minute. Next, add the onion and fry till the onion develops a light golden brown colour. Now add chopped tomatoes and the prepared masala paste along with sugar and salt. Fry for 2-3 minutes. Pour very little water to prevent the masala from getting burned.
Next, add the chicken pieces one by one and continue to stir the chicken so that it gets completely coated with the masala. Cook until the chicken gets fried properly. Now add the milk and stir the chicken nicely. Now cover and cook on low flame until the chicken gets boiled. The time has come to put in the malai. Uncover the pot and add the malai to the chicken. Mix the malai with the chicken and allow it to simmer for 2-3 minutes. Add the garam masala powder and stir gently. Turn off the flame. Serve steaming hot.
