Delicious Brinjal Fry Recipe

Winter is just around the corner and the market is already full of fresh and our favorite vegetables. Two such vegetables are radish (mooli) and brinjal (baingan).Try the following recipes which involve lot of brinjal, radish and wonderful flavors.

These are very different from the conventional mooli and baigan dishes but very easy to prepare. You can try these recipes for your lunch or dinner. Both the recipes go well with rice as well as chapatti. The recipes are very tasty and tangy. Your kids will love it!

Brinjal Fry With Bharta

Things You Need

2 Brinjals
Red chili powder 3 teaspoons
Garam masala 1 teaspoon
Salt according to taste
Vegetable oil 4 tablespoons

For The Bharta

Brinjal (large and long)
Medium size onion, chopped
Green chilies 3-4
Ginger, thinly sliced strips, 1 tablespoons
Tomatoes
Red chili powder ¼ teaspoons
Turmeric powder ½ teaspoon
Coriander powder 1 teaspoon
Salt according to taste
White oil
Coriander leaves, chopped 1 teaspoon
Cumin seeds ½ teaspoon
Coriander leaves to garnish

Instructions For Brinjal Fry With Bharta

Cut the brinjal in long pieces to fry.In a mixing bowl mix all the spices powders and marinate the brinjal pieces in it for 15-20 minutes.Heat oil in a pan and fry the marinated brinjals till it turns red. Keep it aside on a kitchen towel to soak the excess oil.

Do not fry it for more than 2 minutes.The brinjal should be slightly soft and not burnt. You can serve the fried brinjal with steamed basmati rice and sambar. For the bharta grill the brinjal wrapped in an aluminum foil for 15 minutes at 300 degree C. Or else you can grill it on the gar oven too. Be careful while grilling.

You can use a microwave too. Remove the foil and cool it down. Discard the skin and mash the brinjal. Do not discard the excess water.Heat oil in a pan and add the cumin seeds. When the cumin seeds start spluttering add the chopped onions and fry till golden brown.

Now add the mashed brinjal, chopped coriander leaves,thinly sliced ginger and chopped green chilies and mix well.Add rest of the spices and stir well at medium heat for 5-7 minutes.

Remove from the gas oven and pour it on a serving plate.Arrange the fried brinjal pieces on top of bharta and garnish with roughly chopped coriander leaves and green chilies (optional).

Finger Mooli Masaledar

Things You Need

Radish (mooli) 700 gm (cut them into finger long pieces and partially cooked)
Coarse mustard 2 tablespoons
Fennel powder 1 tablespoon
Carom seeds 1 and ½ teaspoon
Black salt 1 tablespoon
Red wine vinegar 1 and ½ cup
Fenugreek leaves ½ cup
Red chili powder 2 teaspoons
Mustard oil 4 tablespoons
Dried ginger powder 2 teaspoon

Instructions For Finger Mooli Masaledar

Marinated the partially cooked radish pieces in all the spices and oil for 45 minutes in refrigerator. Marinate them in a closed lid container.Now pour the marinated radish pieces with the entire content in a microwave proof bowl.

Set the microwave in high power and cook the radish for 3-4 minutes. Finger mooli masaledar is ready. You can serve it as pickle and store it in jars for 1 month.Or else you can serve it with hot chapattis and parathas too.
