Chicken is one of the most versatile proteins and it can be cooked in a number of ways. You can make a roasted chicken, a chicken curry, poached chicken and even grilled chicken. However, one of the most simple and fuss-free way to cook chicken is by baking it.
All you need is a good marinade, an organic chicken and you are ready to prepare it. Unlike a chicken curry, soup or stew, you don’t have to slave over a hot stove while making a baked chicken. Here is a recipe for cooking succulent and juicy baked chicken.
1 ½ kg chicken, skinless, cut into large pieces
¼ cup organic honey
¼ cup Dijon mustard
4 tablespoons of coarse grainy mustard paste
1 red onion
4 garlic cloves
2 tablespoons extra virgin olive oil
½ teaspoon paprika
1 teaspoon freshly ground pepper
2 sprigs rosemary
Salt, to taste
1. In a small bowl, add the Dijon mustard, grainy mustard paste, paprika, organic honey and 1 tablespoon of extra virgin olive oil. Mix all these ingredients together until they are well combined and you have a mixture of runny consistency. Keep this aside. Next, peel the red onion and dice it finely. Peel the garlic and mince it. In a small pan, heat 1 tablespoon of extra virgin olive oil. Add the diced red onion and minced garlic and sauté until the onions turn golden brown in color. Make sure that you do not overcook the onions or they will turn bitter and ruin the dish. Remove from flame and keep it aside.
2. Wash and clean the chicken pieces and pat dry with a clean kitchen towel. Season the chicken pieces with salt and freshly ground pepper. In a wide-bottomed, shallow baking tray, add the sautéed onion and garlic mixture. Now, tip in the seasoned chicken pieces over this mixture. Next, pour the mustard and honey mixture that you had prepared earlier over the chicken. Make sure that the chicken pieces are well coated with the honey and mustard mixture. Add the rosemary sprigs to the baking tray.
3. Cover the baking tray with a tin foil or aluminium foil and bake at 400 degree Fahrenheit for 20-25 minutes. After 25 minutes, remove the baking tray from the oven and discard the aluminium foil. Baste the chicken pieces in its juices by spooning the sauce over the chicken periodically. Bake the chicken for another 30-35 minutes uncovered. Check periodically to make sure that the chicken pieces are browning evenly and there are no burnt bits. Once the chicken is browned on top and is cooked through, remove the baking tray from the oven.
4. Let the chicken rest in its juices for another 10-12 minutes. Resting the chicken is very important as it allows the chicken to cook completely and makes for a more flavorful and succulent chicken. Transfer the chicken pieces to a platter and garnish it with lemon wedges and a sprinkling of chopped parsley. This baked chicken makes a great meal for a weekend dinner. The piquant flavor of the mustard is nicely balanced with the sweetness of the honey, making it a tasty meal.
