Lauki or Opo Squash is a great vegetable for us. It is rich in vital nutrients and full of dietary fiber. It has a light green skin and a juicy vegetable. It is a whole vegetarian dish and great in taste. This recipe is a very easy one. The ingredients are also easily available in market so that you can try it your own.
How to prepare Lauki Thepla recipe
Lauki (Opo Squash) 1 cup grated, whole wheat flour 1.5 cup, Gram Flour 3 table spoon, Curd 4 table spoons, Green Chili 1, Ginger ½ inch piece, Coriander powder ½ tea spoon, Cumin powder ½ tea spoon, Red chili powder ½ tea spoon, Turmeric powder ¼ tea spoon, Oil 1 table spoon, Salt as required, Oil as required for roasting.
First peel the lauki and then grate it finely with the help of a grate the lauki in a glass bowl of medium size. Take about 1 cup of grated lauki. Now make a paste with green chili and ginger in a mixer use 1 tea spoon of this paste. Add all the spices with the grated lauki like ginger-green chili paste, Coriander powder, Cumin powder, Red chili powder, Turmeric powder and salt to taste. Mix all the spices & salt well with the grated lauki and keep the whole mixture aside for 5 minutes. You will notice that the lauki will release its juices.
After 5 minutes add whole wheat flour and gram flour with the grated lauki and spice mixture. Mix it well thus all the ingredients get mixed well and the mixing procedure is very important for this recipe. Now add 2 table spoons of curd and 1 tbsp oil in this mixture. Mix all the ingredients thoroughly and then knead into smooth soft dough. You may add more curd if it needed to make the dough.
Now make medium sized balls from this dough. Then dust a rolling board with wheat flour. Take each ball and roll it with the help of a rolling pin. Sprinkle more whole wheat flour if you required it at the time of rolling.
Roll each ball in to a round shape of about 5 to 6 inches in diameter and try to maintain uniform thickness in all the sides while rolling it. Now place the rolled thepla on a hot griddle. Keep the flame low when you are frying your theplas. When one side is been fried you will see bubbles on the upside then flip it to the other side. When the other side is fried spread some oil on the thepla uniformly all over it. Turn your thepla again. Now spread some oil on this side to fry it. Flip the lauki theplas once or twice till they are well cooked. Prepare all your theplas in this way one after another. Your lauki thepla is ready to serve. Serve it with curd or mango pickle.
If you do not want to use gram flour in this recipe you may skip it and do the recipe only with whole wheat flour. If you are preparing theplas for eating it later or to carry away it , then cook it with some more oil so that the lauki theplas stay soft for a long time of interval.
