Delectable Pineapple Praline Gateau Recipe

Pineapple Praline Gateau features layers of soft whipped cream, juicy pineapple and mouth-watering praline made up of cashews and almonds. This cake is perfect for birthdays, anniversaries, parties and even Christmas.

Ingredients For The Gateau:

Egg- 3
Castor sugar- 75 grams
All purpose flour- 75 grams
Baking powder- ½ teaspoon
Vanilla extract- ½ teaspoon
Butter- For greasing
Sugar- 100 grams
Cashew nuts and almonds- 50 grams (chopped)
Water- 1 tablespoon

Ingredients For The Frosting:

Fresh cream- 300 ml
Icing sugar- 1 tablespoon
Canned pineapple- 1 tin

Method of Preparation

Method Of Preparation:

1. In a wide glass bowl, combine castor sugar and eggs together. Mix them with the help of a blender. Keep blending until the mixture becomes fluffy and doubles up in quantity. Next, add the flour and mix properly. The mixture should be smooth in consistency without any lumps. Now add the baking powder and vanilla extract. Blend for 2-3 minutes and keep the mixture aside.

2. Take a cake tin and grease it with a little butter. Pour the mixture into the tin and put it inside the microwave oven. Bake the cake on 180 degrees centigrade for 30 minutes. Take out the cake and allow it to cool down a bit.

Baking

3. Place a heavy bottomed pan on the flame. Pour the water and sugar into the pan and keep stirring it on a low flame. The sugar will caramelize and acquire a light golden colour. Now add the chopped almonds and cashews and stir the mixture once again. Turn off the flame. Take another bowl and grease it nicely with butter. Now pour the sugar and nut mixture inside this bowl and allow it to cool completely. The mixture will harden after sometime. Carefully break the mixture into small pieces. Your delicious praline is ready.

4. In a big bowl, add the fresh cream and keep on whipping until it becomes stiff in texture. Gradually add the icing sugar and continue whipping for few minutes. Now cut the cake into three layers. Coat the first layer with 3 tablespoons pineapple juice. Now spread the whipped cream on top followed by the praline slices. Add some pineapple slices on top. Now place the second layer on top of the first layer of cake. Repeat the same frosting procedure as mentioned above. Finally, place the third layer on top of the second layer and spread the cream frosting on top and also on the sides of the cake. Garnish with pineapple slices and put it in the refrigerator. Serve Chilled.
