Everybody loves a chocolate cake and if it’s oozing hot chocolate lava, what more can you ask for? Chocolate lava cakes are probably one of the most loved chocolate desserts that are liked by both kids and adults. They are light, fluffy and ooze hot runny chocolate. Now, if you thought you cannot make it at home, then you are wrong.
Chocolate lava cakes do look like something that is difficult to make but they are incredibly simple. All you need to do is have the ingredients and the amounts right to produce the most delicious molten chocolate cake. Here is a simple recipe that you can try at home.
Preparation Time: 10 minutes
Cooking Time: 12-15 minutes
¾ cup chocolate, dark and unsweetened
¼ cup semi-sweet chocolate
½ cup butter
½ cup all-purpose flour
1 ½ cups powdered sugar
3 egg yolks
1 teaspoon vanilla extract or essence
Powdered sugar for sprinkling on the cake

Start by preheating the oven at 425 degree Fahrenheit. Now, grease 4-6 oven-proof ramekins with some softened butter. This is very important, as a well-greased ramekin will let the cake come off easily. Keep the ramekins aside and prepare the cake batter. To make the batter chocolaty, you need to first melt both the dark and semi-sweet chocolate in a double boiler or you can simply use the microwave.
Take a big glass bowl and add both the chocolate in it. Keep this bowl over boiling water to melt it. Add the softened butter to this mixture and let that melt too. Once both the chocolate and butter has melted, mix them together. In another big bowl, add powdered sugar and flour together. Mix it well. Now, slowly add the all-purpose flour and powdered sugar to the melted chocolate and butter mixture.
In another bowl crack 3 eggs and add the 3 yolks to it. Mix them and add to the flour and chocolate mixture. Stir the mixture well until it is smooth. Finally, add a teaspoon of vanilla essence. The mixture is now ready to bake.
For baking, divide the cake batter into the greased ramekins in equal amounts. Do not fill them to the top as the cake will rise a little bit. Place the ramekins in a baking tray and place it in the preheated oven. Now this is the tricky part, the cake will need at least 12 minutes to cook. However if you feel the cake looks too soft after 12 minutes, leave it in the oven for another 2-3 minutes.
The cake should be cooked by now and the edges must be firm and the centre should be soft and wobbly. Remove from oven and slowly run a knife around the edges. Have it directly from the ramekin or flip it into serving plates. For garnishing, sprinkle some powdered sugar on top of the cake. Serve with cold double cream and a few raspberries or strawberries. Finally, dig into the hot gooey chocolate delight.
