Creamy Peanut Butter Cookie Recipe

These cookies can be preserved successful for a week in air-tight jars or even for more than a week when refrigerated.

Creamy Peanut Butter Cookie

Ingredients

2 cups of all-purpose flour
1 cup of unsalted butter, at room temperature
A pinch of salt
½ cup of white granulated sugar
½ teaspoon of baking soda
½ cup of light brown sugar
1 cup of peanut butter
1 teaspoon of pure vanilla extract
½ cup of chopped peanuts

Process

1. Preheat your oven to 350 degrees Fahrenheit before preparing the dough for the cookies. For that, set the preheating temperature and then arrange a rack in the centre of the oven. Now take two baking sheets and line each one of them with parchment paper. Once done, set aside the two baking sheets and then attach the bowl of your electric mixer to the mixer. Now tip the butter and the white sugar into the bowl and beat the mixture until it turns into a pale yellow color and becomes fluffy. Next, add the brown sugar and beat for another 2 minutes.

2. Once that happens, add the peanut butter and beat it with the rest of the ingredients. After that, break open the eggs and tip them into the bowl one by one while beating the mixture constantly. Follow that by adding the vanilla extract. Now take a separate bowl and whisk the flour, baking soda and the salt. Once thoroughly mixed, add the flour mixture a little at a time to the mixture in the bowl and continue beating the mixture until the entire flour mixture is nicely mixed with the peanut butter mixture. Scrape the side of the bowl and then add the chopped peanuts.

3. Fold the chopped peanuts with the cookie dough and then remove the bowl from the mixer. Take out the dough from the bowl and cut it into several 1-inch sized balls. Roll the balls to even out their outer sides and then place them on the prepared baking sheets by maintaining a distance of 2-inches between each ball. Now take a fork and dip it in confectioner’s sugar. Press down each ball twice with the back side of the fork head to make a crisscross pattern on the cookies.

4. Once done, insert the baking sheets into the preheated oven to bake the cookies for 10-12 minutes or until they turn slightly brown around the edges. Once done, remove the baking sheets from the oven and let the cookies cool down. Once cooled, serve the cookies immediately or store them in air tight jars.
