Cajun as you all know, refers to the ethnic group of people who live in the American state of Louisiana. The people are mainly the descendants of Arcadian exiles. Cajun cuisine has influenced American eating and cooking to a great extent. Cajun spices work wonderfully for a lot of pasta and chicken dishes.
It’s spicy and adds just the needed amount of heat to the food. You may prepare the Cajun spice and store it for a long time; just add it to the dish you want to prepare whenever you feel like! This delectable creamy Cajun chicken pasta is wholesome and delicious for any meal of the day.

Cajun spice mix
(Makes a cup of Cajun spice mix)
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon red pepper flakes
1 tablespoon garlic powder
1 1/2 tablespoon paprika
1 teaspoon onion powder
1 tablespoon ground black pepper
1 tablespoon salt
For The Pasta
4 quartets of water
2 pounds of linguine or fettuccine
2 tablespoon olive oil
salt to taste
For The Chicken
4 chicken breast pieces slices into half
1 large onion sliced
1 capsicum sliced, seeds removed
1 red pepper sliced, seeds removed
1 cup of heavy cream
2 sticks of butter
salt and pepper to taste
For making the Cajun spice mix, all you need to do is put all the contents into a mixing bowl and stir till a uniform mixture is formed. This can be stored in an air tight container.
In a large skillet, heat a stick of butter. Coat the chicken with 2 tablespoon of Cajun spice mix. Rub it on the chicken pieces well and throw them into the skillet. Stir for seven to eight minutes. Once the chicken starts to lose it’s pink color, add the onions, the capsicum and the red pepper slices.
On a medium flame, let these ingredients cook for a good ten minutes. When the vegetables look well done, add the heavy cream, salt and pepper. The cream helps in balancing the spiciness of the Cajun chicken. (If you are fond of spicy food, you may even cut down on the cream proportion.) Let the chicken and the vegetables cook on simmer in the cream, while you can ,make the pasta.
In a heavy bottom pot, boil the water. Add some salt to the water and also 2 tablespoon of olive oil. This will ensure the pasta to cook perfectly. Add the pasta to the boiling water and let it cook for eight to ten minutes to al dente.
In a large pan, heat the remaining butter and add the pasta to it. Stir for two to three minutes and then add the chicken to it. Mix the creamy Cajun chicken with the pasta and give it a good stir till all the chicken is equally distributed in the pasta. Keep it on medium heat for five minutes and then serve it hot with corn bread or alone.
