Chicken and waffles is a very popular South-American soul food dish, in which normal waffles are served with fried chicken, butter and maple syrup. Although the combination is a bit unusual and awkward, the dish is pretty famous for its taste.
The crispy fried chicken tastes awesome when paired with sweet and savory waffles. However, the butter on the side creates the magic for this dish.
Preparation Time: 30-40 minutes

For The Fried Chicken
1 kg of chicken, with bone and with skin
2 cups of self rising flour
3 tablespoons of water, at room temperature
2/3rd teaspoon of freshly ground black pepper
1 teaspoon of garlic powder
3 large eggs
5 pints of vegetable or peanut oil
4 tablespoons of red sauce
Salt, to taste
For The Waffles
2 cups of all-purpose flour
4 tablespoons of salted butter
2 large eggs
2 tablespoons of white granulated sugar
½ teaspoon of pure vanilla extract
2 cups + ½ cup of buttermilk, at room temperature
1 teaspoon of baking soda
1 tablespoon + 1 teaspoon of fresh thyme, finely chopped
1 teaspoon + ½ teaspoon of baking powder
½ teaspoon of salt
Method Of Cooking
1. Take the chicken pieces and put them into a large bowl. Retain the skin of the chicken pieces. Now transfer the bowl to the sink and rinse the chicken pieces individually under running water. Rub and scrub the chicken pieces with fingers until you get rid of all the impurities and then put them back into the bowl. Now take the chicken pieces and pat dry them with paper towels. After that, take a medium sized bowl and break open one of the eggs in that. Add two more eggs to the other egg and then beat all the eggs together. Once thoroughly beaten, add the hot sauce and water to the eggs. Once everything is added, whisk the mixture once again until the hot sauce and water mix with the eggs. Once done, set aside the eggs mixture.
2 Next take another medium sized bowl and tip the self rising flour into that. Add some freshly ground black pepper to the flour and then stir to combine the black pepper with the flour. Once everything is ready, take the chicken pieces and sprinkle some salt over them to season them. Follow that by sprinkling the garlic powder over every chicken piece. Massage the chicken pieces individually with your hand to allow the seasonings penetrate the chicken pieces and then pick up one of the chicken pieces. Dip the chicken piece in the egg solution and then dredge in the seasoned flour. Repeat the same procedure to coat and dredge all the chicken pieces in the same way.
3 Now take a deep skillet and pour the oil into that. Place the skillet over high heat and let the oil become piping hot. While the oil is reaching the desired temperature of about 350 degrees Fahrenheit, take a large bowl and tip the flour into that. Add salt, baking powder, sugar, chopped thyme and baking soda to the flour and then whisk everything together.
4 Take another bowl and whisk the milk, two eggs and the vanilla extract in that. Once done, pour the wet mixture into the bowl of the dry mixture to prepare the batter. Whisk the batter until it becomes almost lump free. In the meantime, heat up your waffle iron. Once the waffle iron heats up, pour ladlefuls of waffle batter into the waffle iron and then let it cook until it becomes golden brown and crispy.
5 While the waffles are cooking, tip the dredged chicken pieces into the hot oil and then fry them until they turn golden brown and crispy. Fry all the chicken pieces in the same way and then serve them with the warm waffles and butter, by pouring some maple syrup over the chicken and waffles.
