Chinese Stir Fry Vegetarian Recipe
Preparation time: 25 minutes
Cooking time:20 minutes
Servings: 6-8 persons
3 cups Chinese broccoli, chopped into 1-inch pieces
3 cups Chinese cabbage or bok choy, trimmed and chopped lengthwise into quarters
2 cups Red and yellow bell pepper, chopped
1 cup Chinese long beans,, trimmed and chopped
1 Big red onion, chopped and layered separately
2 tablespoons ginger, minced
5-6 garlic cloves, minced
1/2 tablespoon red chilli flakes, crushed
11/2 cup vegetable stock or broth
5 tablespoons sesame oil or vegetable oil
4 tablespoons soy sauce
1 tablespoons of cornstarch, dissolved in 1 tablespoon of cold water
1/2 cup of Green onions, finely chopped
In a large wok or skillet, heat 2 tbsp of sesame oil. When the oil is hot enough, add minced ginger, garlic, red chilli flakes and stir- fry for about a minute or until the aroma spreads throughout your kitchen. Add chopped onion pieces and stir-fry on medium high heat for 2-3 minutes or until they turn glossy. Remove from the flame and keep aside in a plate. Add another 3 tsps of oil in the same wok and heat it.
Once the oil is hot enough, quickly add chopped long beans, broccoli and chinese cabbage or bok choy. Stir-fry them on a high flame for about 3-4 minutes. Then, add chopped bell peppers and continue stir frying them for another 2-3 minutes. Add the aromatic stir fried ginger, garlic and onions. Also add vegetable broth/stock to the veggies. Continue to stir fry them for about 4-5 minutes or until they turn soft, tender yet crispy.
Re-stir the prepared cornstarch mixture and quickly pour it into the centre of the wok and mix thoroughly. Add soy sauce and mix well until the veggies are nicely coated and glazed with the sauce. Your hot and exotic dish is ready to relish. Transfer into a serving platter and garnish with chopped green onions. Serve sizzling hot with steamed brown rice, grilled chicken or noodles and ENJOY!
You can use different veggies of your choice like carrots, mashed potatoes, sliced mushrooms etc for this recipe. You can also garnish your dish with toasted sesame seeds or sliced scallions for a variation. You can also add tofu or seitan to your dish to get that meaty flavour. Seitan is not popular like Tofu but it surprisingly gives the texture of meat when it is cooked, making it a popular meat substitute.
You can also use chicken instead of tofu or seitan for a non vegetarian version. You can try cooking your dishes using different Chinese sauces like Szechuan sauce, oyster sauce, Hoisin sauce or garlic sauce as it is a great way to add extra flavor to stir-fry dishes. Also try adding a little sugar, honey or liquid sweetener to your dish for an interesting twist.
