Ingredients For Chicken Noodle Soup

2 1/2 cups of Noodles (veg, egg or chicken/meat flavoured)
12 cups of freshly prepared Chicken broth
3 cups of Chicken (cooked with some salt and pepper)
1 cup of chopped White Onion
1 cup of chopped celery
1 cup of chopped carrot
4 sprigs of fresh parsley
1/2 teaspoon of dried thyme
1 big Bay leaf
1/3 cup of cornflour
1 teasspoon of Oil or Butter
Salt according to taste
Pepper according to taste

Method of Cooking

1. First of all, Heat a large pot with some water in it. When the water start to boil. Add some salt and then cook the noodles in it until it becomes tender. Ones it’s cooked drain the water and then run under cold running water.

This ensures that the noodles dont stick to each other. It is also a healthier option to rinse out the plastic content in it.Now keep the noodles aside.In the same pot, pour in the fresh chicken broth and leave it to heat.Add the Bay leaf, salt and pepper to this. Bring it to boil.

2. Take the chopped carrot and add into the pot. After 5 minutes add the chopped celery and white onion to this. Reduce the flame and cover the pot. Let it to simmer for about 15 to 20 minutes. We need all the veggies to be soft but not mushy. Overcooking will change the taste and also the texture of the soup.In an another bowl, mix the cornflour with some warm water.

3. Keep stirring well. Let the cornflour dissolve with the water completely without leaving any lumps in it.Add this slowly to the soup and keep on stirring it. Check the consistency (according to preference as it should be thick or thin) and adjust it now.Stir in the diced chicken pieces and the cooked noodles to this.

4. Now switch off the flame, ifnot you’ll end up with tangled and overcooked noodles. Now all the contents are cooked as per requirement.Adjust the salt and pepper according to your taste.
Now add one teaspoon full of butter or oil and pour the soup to the dish.
