Chicken Milanese with Tomato and Fennel Sauce If you have an inclination towards Italian food and you also happen to be a chicken lover, chicken Milanese is going to take your breath away. Ingredients

For The Chicken

8 pieces of Chicken Breasts, sliced into butterflies
4 Eggs
4 cups of Bread Crumbs
1 stick of unsalted butter
4 table spoon Olive Oil
1 tablespoon dried thyme
Salt and Pepper to taste

For The Tomato And Fennel Sauce

2 bulbs of fennel sliced finely
2 cups of cherry tomatoes, chopped or cubed
2 cloves of garlic
one tablespoon of dried thyme
4 oz of mascarpone cheese
4 tablespoon of extra virgin olive oil
salt and pepper to taste

Preparing The Sauce

Heat some extra virgin olive oil in a sauce pan and add the sliced fennel bulbs to it. Stir it for 3 to 5  minutes and then add the chopped tomatoes. Add the dried thyme and then the mascarpone cheese. Cook it for ten minutes or less till the mixture looks gooey and of a thick saucy consistency. Add salt and pepper to taste. You may add some more olive oil if you prefer. Keep it aside till the chicken is made.

Method Of Cooking The Chicken

You must remember that making Chicken Milanese is as simple as it can get , but there is a trick that will help you make it the most delectable chicken dish you ever had. The simple trick is to marinate the chicken in an egg mix for an hour to hour and a half. Add some salt to the four beaten eggs and pour it over the chicken breasts. If you want a creamier consistency, you may add Parmesan cheese to the mixture also. It will add a cheesy touch to the chicken. But, do this is you are really fond of cheese. Make sure all the pieces are well covered in the egg mix. Let it sit for an hour to 90 minutes.

Coat the marinated chicken pieces in breadcrumbs and heat butter and olive oil in a skillet. Once the butter melts and mixes with the oil, place the chicken pieces in. On a medium flame, fry the pieces till they are golden brown. You will notice that after 12 to 15 minutes of cooking, the chicken is not pink anymore and has developed a lovely golden crust.

Once the chicken is done, just pour the sauce over the chicken and serve hot with garlic bread or spaghetti of your choice. You could serve the sauce separately with the chicken as well. If you pour it on the fried chicken, you need to eat it while the outer crust is still crispy. While if the sauce is served separately, the chicken stays crunchier.
