4 chicken breasts, diced or cubed
2 cans of beans ( raised and drained cannellini beans or white kidney beans can be used. )
2 cups of chicken broth
1 chopped onion
4 cloves of garlic, minced
1 seeded and chopped jalapeño pepper
1 tablespoon dried oregano
2 green chilies chopped
4 tablespoon olive oil
4 oz chopped coriander or parsley
1-1/2 cups (6 ounces) shredded cheddar cheese
Method Of Cooking
This is perhaps the simplest way of making chicken chili with white beans. To begin with, you need to prepare the chicken. You may also use any leftover chicken that is available. Just toss them in the skillet with a little bit of oil and stir for some time.
Take it off the heat and dice them or cut them into small cubes. If you are planning to make the chicken, you need to start by sprinkling salt and pepper onto the chicken skin and frying them for ten minutes and then dicing or cutting them into cubes.
In a heavy bottomed pan, heat some olive oil and add the chilies, onions, 2 cloves of chopped garlic, jalapeño and half a tablespoon of oregano. Stir lightly till the onions turn translucent. Add the chicken and then the broth.
Add the beans after ten minutes and cover the pan and let it cook on simmer for an hour. Before serving, add the shredded cheddar cheese and sprinkle some dried oregano.
The best way to serve the chicken chili with white beans is with some sour cream sauce, known as ‘raita’ in Indian and Pakistani Cuisine. To make raita or the sour cream sauce, you need to hang curd in a moist muslin cloth overnight.
