Recently, I was told by doctor that I had haemorrhoids. He wrote the words ‘high roughage diet’ on my prescription paper. Much to my woe, I was asked to remove all spicy, oily and ‘white’ from my diet- I disliked the idea of having brown rice, brown sugar, and brown bread on a daily basis … eep! But that was the only way I could heal.
As far as brown bread is concerned, I tried making it at home itself. Though easily available in market, I did not want this disease to get in the way of my culinary practice. And I was able to make a delicious one. You too can follow the recipe and make it on your own.
Preparation time: 1 hour 15 minutes (approx)
Ingredients Required for Brown Bread
500 gm wholemeal flour (wheat flour without its barn removed)
1-2 tsp brown sugar
1½-2 tsp salt (or as per taste)
Water enough to make the dough
2 tsps yeast (fresh)
A tsp of butter
A tsp vegetable oil
Steps of Making Brown Bread
Pour wholemeal flour in a wide bowl. Make sure that it is warm enough to be kneaded. A preheating over low temperature can be done in case your flour is too cool to be make dough. Sieve it and remove impurities if any.
Shower some fresh yeast and two tsps brown sugar over the flour. Also sprinkle a teaspoonful of salt. To make the dough soft, add a tsp of butter (optional). Mix all the ingredients by moving spoon through them or do it with your hands. Keep the contents aside for about 5 minutes before initiating the kneading process.
Take a glass of lukewarm water and start pouring it slowly over the flour. Knead it with your hands. Add more water so that the entire flour gathers to form pliable mass and no dry flour is left behind in the bowl.
Now, transfer the dough on a clean flat surface and knead it for 5 minutes. Leave it for 15-20 minutes. And knead once more before baking it.
Transfer the dough on to a buttered-tin that is big enough to accommodate it. You can grease the inner surfaces of the tin with some vegetable oil. Press and level the upper surface. You can also employ several small tins also. Do not fill each tin to the brim as the dough will expand considerably. Wait for about half an hour and you will see that the dough has increased to almost double its original size.
Preheat microwave oven to about 200 degree Celsius. Bake the greased tin containing dough for 30 minutes. If you are using more than 500 g flour, then bake it for longer time. Remove from the oven when the bread becomes somewhat crispy.
Let the baked loaf get cool to room temperature. Refrigerate it.
You can do a little experimentation if you like. Instead of kneading with water, you can use milk also; that makes it soft. Garnish your bread by sprinkling some sunflower seeds over it.
