2 cups of plain all-purpose flour, sifted
3/4th cup of whole milk, at room temperature
1 cup + ½ cup of sugar
½ teaspoon of salt
3 large eggs, at room temperature
2 teaspoons of baking powder
2/3rd cup of unsalted butter, at room temperature
1 teaspoon of pure vanilla extract
Method Of Preparation
1. Take a large bowl and place a large wire sieve over it. Tip the flour into the sieve and then shake it to sift the flour. Once done, add the salt and baking powder to the flour and then stir to combine all the added ingredients nicely. Once done, set aside the bowl and the set a preheating temperature of 400 degrees Fahrenheit on your oven. After that, take a 9-inch round baking pan and coat its sides and bottom nicely with butter. After that, coat the entire pan with flour and then shake off the excess flour. Once done, set aside the pan.
2. Now tip the flour mixture into a large mixing bowl and add the butter to it a little at a time. Beat the mixture on low speed until it attains a crumbly texture and turn into a pale yellow color. Next, take an egg and crack it open. Pour the entire content of the egg into the mixing bowl and beat the mixture on medium speed until well combined. Add the remaining eggs one by one while beating the mixture constantly and then add the vanilla extract.
3. Finally, pour the milk slowly into the bowl while beating the mixture on medium high speed. Once the entire milk is added, beat the batter for another 2-3 minutes or until it turns into a homogenous mixture and you no longer get any lumps. Scrape the sides of the bowl with a rubber spatula when half the time elapses and then beat the batter again for the remaining time. Once you are ready with the batter, pour it slowly into the prepared pan and then shake the pan gently by holding its two sides to spread the batter evenly in the pan.
4. Now insert the baking pan into the preheated oven and place it on the middle rack. Bake the cake for 30-35 minutes or until it attains a golden brown color on the outer side and a skewer comes out neat after inserting it into the deepest part of the cake. Once that happens, take out the baking pan from the oven and place it carefully on a wire rack. Wait until the cake cools down and then flip the baking pan to take out the cake from it. Glaze the cake if desired and then cut it into wedges to serve.
