The smell of a freshly baked cake is enough to let you know that the holiday season is coming. One of the most loved holiday cakes is the fruit and nut cake. It is loved by kids and adults alike. However, like we all know, cakes involve baking and eggs are a key component in baking cakes.
Well, not quite true. You can easily bake a cake without using eggs and yes, a nice fruity cake too! Here is a simple yet extremely tasty eggless fruit and nut cake recipe that will make you want to bake one every season.
Preparation Time: 25-30 minutes
Cooking Time: 30-40 minutes for baking and another 30 minutes for cooling.
1¾ cups all-purpose flour
1 cup powdered sugar
1½ cups water
½ cup softened butter
1/3 cup dried apricots
1/3 cup dried cranberries
1/3 cup sultanas
1/3 cup chopped cashew nuts
1/3 cup chopped almonds
1/3 cup chopped walnuts
1/3 cup chopped pecans
2 tablespoon rum or brandy (optional)
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon nutmeg powder
½ ground cinnamon
To make the fruit and nut mix, you first need to cook the dried fruits. In a medium sized pan, add the dried apricots, sultanas and the water. Put a lid on it and cook in low heat for 8-10 minutes or until the dried fruits have become a little soft and plump. Remove from heat and transfer into a larger bowl. Add the softened butter and mix well until the butter melts. Keep aside for 1-15 minutes to cool. Add the vanilla extract and 2 tablespoon of brandy or rum. Mix well.
Preheat the oven to 350 degree Fahrenheit. To make the flour mix, add the all-purpose flour and sugar. To this, add the baking soda, salt, nutmeg and cinnamon powder. Now, combine both the flour mix with the wet fruit mixture. When doing this, make sure to add a little flour at a time. Fold in the dry mix well and add the chopped nuts.
Once the batter is prepared, take a baking tin and grease it with butter or oil. You can also line the baking tin with butter paper to make sure it won’t stick and come out easily. Pour the cake batter into the tin and bake it in the oven for 30-40 minutes. To make sure the cake is cooked, stick a sharp knife or a fork into it.
If it comes out clean, the cake is cooked and ready to take out of the oven. After removing the cake from the oven let it rest in room temperature for at least half an hour. Do not try to take the cake out of the tin when hot, as this will just make it crumble and fall apart. Once cool, flip the cake into a cake stand and sprinkle some powdered sugar for garnishing.
This recipe is incredibly easy to make and great for people who do not have eggs. To make the cake fruitier, you can add dates, dried figs, cherries etc. Nuts like pistachios and walnuts work well too. Make it any dried fruits of your choice, it is bound to taste good and be a complete hit among the people.
