4 skinless chicken breasts
5 tablespoons black bean sauce
2 tablespoon dried black beans
1 yellow bell pepper
1 red bell pepper
1 red onion
3 spring onions
2 tablespoon vegetable oil
1 tablespoon soy sauce
2 garlic cloves
1 red chili
1 teaspoon cornflour
Salt, to taste
Handful of chopped coriander


Soak the dried black beans in hot water for 10-15 minutes. Drain black beans and keep aside. Next slice the chicken breasts into one inch thick strips. Peel and slice the red onion very finely. Thinly slice the yellow and red bell pepper and keep them aside. Mince the garlic cloves and chop the red chili and spring onions.

In a wok or a large pan, heat the vegetable oil. Once the oil is hot, quickly add in the sliced red and yellow peppers and the red onion. Turn on the heat and stir fry for three to four minutes. Make sure that you stir the mixture with your ladle or the peppers and onions will overcook. Next add in the sliced red chili and minced garlic and cook for further two minutes. Now, add the chicken pieces into the pan or wok and cook on medium heat for seven to eight minutes. The chicken should be seared from all sides and there should be some amount of caramelization.

Add the spring onions to the chicken along with the drained black beans. Cook for another two to three minutes. In a small bowl, add the black bean sauce. Pour in the soy sauce along with the cornflour. Mix all these ingredients together to form a thick sauce of pourable consistency. If you find that the mixture is too thick, loosen it by adding a few tablespoon of water. Make sure that the cornflour is well incorporated into the black bean and soy sauce mixture and there are no lumps.

Add this black bean and soy sauce mixture into the pan and combine well. The chicken pieces should be well coated with this sauce. Once the sauce thickens, adjust seasoning by adding salt if required. Remove pan from heat and transfer the stir fried chicken with black beans to a bowl. Garnish with chopped coriander and serve with steamed white or brown rice.
