Another simple recipe to add to your culinary repertoire is that of ginger chicken. This is a classic dish with ginger and curd as its base. You can also tweak the recipe and incorporate subtle variations to it. It’s quick and is an instant hit with your guests.

Pepper Ginger Chicken

For the ingredients you will need
1 kg chicken, preferably boneless,
1 ½ cups of curd,
1 level table spoon of freshly ground white pepper,
1 table spoon of ground or grated ginger,
Salt as per taste,
2-3 table spoons of butter
1 table spoon sugar.
Beat the curd to avoid the formation of lumps. To the beaten curd add the grated ginger, ground white pepper and salt. Mix well. Now dunk the pieces of chicken in this curd mixture so that they coat well. Marinate the chicken for 3-4 hours in the refrigerator.
In a frying pan, melt the butter. To it add the sugar, constantly stirring it till it begins to caramelise. Now add the chicken along with the marinade and mix well so that the butter coats well over the chicken. Allow the chicken to cook on a low flame for about 20-25 minutes till it is well done. Ensure that the water released by the marinade completely evaporates. The chicken is now ready. Since this is a dry chicken, you can serve it with continental accompaniments like bread and pasta.
Ginger Almond Chicken

This is another tasty recipe with a slight variation.
For the ingredients you will need,
1 kg chicken cut into medium pieces,
1 table spoon of grated ginger,
The juice of one lemon,
The juice of one orange,
1 teaspoon of honey,
1 table spoon of finely crushed almonds,
Salt to taste,
1 tea spoon of black pepper,
Salt to taste
2 table spoons of butter
Wash and skin the chicken. In a wok or a frying pan melt the butter. Lightly sauté the crushed almonds till they start turning brown in colour. Now add the pieces of chicken to this and fry it for at least 5-7 minutes till the chicken turns golden brown.
In a separate vessel mix together the honey, lemon juice, grated ginger, orange juice, salt and pepper. Pour this over the fried chicken. Mix the chicken well till it is evenly coated. Allow the chicken to cook over a low flame for half an hour. When the chicken starts to cook, make sure you the water completely dries out. Serve this chicken hot with a potato salad and vegetables. You may also have it with rolls or bread.
These ginger chicken recipes should be made from freshly grated ginger. The store brought ginger paste will not have the same effect and may become too pungent for your liking. In the above recipe, you can try and substitute orange juice for red wine which will enhance the tangy sweetness of the chicken.
