Mixed Vegetable Soup

Mixed Vegetable Soup

Ingredients

Potato (1 medium size), green capsicum (1 medium), button mushrooms (6 – 8), carrot (1 medium), onion (1 medium), cabbage (1/4 medium), cauliflower grated, French beans (6-8), 1 tbsp oil, 2 bay leaves, 2 tsp of whole wheat flour, white pepper powder, salt, 2 cups each skimmed milk and vegetable stock.

Method 

Heat 1 tbsp oil in a pan. Add bay leaves along with onion. Sauté for 2-minutes on medium heat, now add finely chopped potato, French beans, cabbage, mushroom, carrot and cauliflower. Stir on high heat (3 to 4 minutes). Now add whole-wheat flour and stir again until you get nice aroma. Add vegetable stock, white pepper and salt. Bring this mixture to boil. Add capsicum. Simmer the vegetables on a low heat until they are done and the mixture reaches a thick consistency. Now, add skimmed milk. Simmer for 3 – 4 minutes. Remove bay leaves and serve the hot soup.

Bean Sprout And Bean Curd Soup

Bean Sprout And Bean Curd Soup

Ingredients

1-inch cubes of Tofu (200 grams), ½ cup bean sprouts, 1 tbsp oil, 3 cloves of garlic, 5 cups of vegetable stock, 2 tbsp of oyster sauce, 2 tbsp of soy sauce, a pinch of sugar, salt, 7-8 sliced fresh mushroom, 1 tbsp of chopped coriander leaves, a pinch of white pepper powder.

Method

Heat oil in a pan and add garlic. Sauté until garlic is golden brown. Now add vegetable stock, soy sauce, oyster sauce, sugar and salt. Let the mixture simmer for 15-20 minutes. Add mushrooms, bean curd, bean sprouts. Simmer for 5-minutes. Garnish with coriander, white pepper powder and serve hot.

Ingredients 

1 medium cubed carrot, ½-cup green peas, 3-cups of vegetable stock, 2 tbsp corn starch/corn flour, 1 tbsp of oil. 1 medium mushroom quartered, 2 tbsp of corn niblets, sugar, salt and crushed red chillies (1/2 tsp)

Method

Boil green peas and carrot in vegetable stock (2-3 minutes), Dissolve corn flour in water. Heat oil, add mushrooms, capsicum and cook for about 2-3 minutes. Add the mixture of green peas and carrot along with sweet corn niblets. Bring this to a boil. Now add sugar, crushed red chillies and salt. Blend corn flour and stir continuously. Cook for a minute and serve piping hot.

Ingredients

Diagonally sliced snow peas (8-10), 5-6 straw mushrooms, 1 tbsp oil, 2 stems lemon grass sliced, 1-inch piece of bamboo shoots, 4 kaffir lime leaves, 1 tbsp red curry paste, one-third cup of cabbage, diagonally sliced 4 red chillies, 2 tbsp lemon juice, a few sprigs of coriander leaves, salt to taste.

Method

Heat a tbsp of oil in a pan. Now add snow peas, mushrooms and lemon grass. Toss the mixture. Add bruised kaffir leaves, and red curry paste. Stir the mixture and add 4-cups of water. Bring the mixture to a boil. Add cabbage. Stir again. Add salt and fresh red chillies. Add lemon juice, after removing the pan from heat. Serve piping hot garnished with coriander.

Balinese Vegetable Soup

Ingredients

225 grams of French beans (cut into ½ inch pieces), 1 clove of garlic, 2 red chillies chopped, 4 almonds, ½ tbsp coriander powder, 2 tbsp of oil, 1 medium onion, 2 tbsp of lemon juice, 2 cups of coconut milk, 11/3 cups of bean sprouts, 3 bay leaf, salt to taste

Method

Grind red chilli, almonds, coriander powder and garlic to a paste. Heat 2 tbsp of oil in a pan. Add onion, sauté for a minute and then add French beans. Sauté for another minute and add ground paste along with ½ cup of water and salt. Cook for few minutes. Add thinly sliced lemon. Squeeze the remaining lemon and add to the cooking soup. Add coconut milk (make sure to reduce heat before adding). Cook until the mixture just boils. Place bean sprouts in a bowl and pour the soup over it. Slice the red chilli diagonally and sprinkle it over the soup.

Golden Vegetable Soup

Ingredients

One medium carrot, 1 medium cabbage, 5 medium tomatoes, 11/2 cups bean sprouts, 1 tbsp olive oil, 1 medium onion, 2 cloves of garlic, ½ tsp dried thyme, 1 bay leaf, 5 cups of chicken stock, black pepper powder, salt and fresh coriander springs.

Method

Heat 1 tbsp oil in a pan. Add chopped garlic, onion and carrot. Sauté the veggies for 2-minutes. Add thyme and finely cut cabbage, sauté for another 2 minutes. Now add chicken stock. Allow it to simmer for 10-15 minutes. Remove from heat. Blend the cooled mixture into a puree. Cook bean sprouts in another pan along with bay leaf and 2-cups of water. Drain the excess water. Transfer the puree into another pan. Add bean sprouts, black pepper, salt and water. Cook for 5-minutes. Garnish with coriander and serve hot.
