Rice is one of the staple foods and the primary crop grown in many parts of the world. Although there are several varieties of rice ranging from white rice, black rice, sticky rice etc. but not all are equal when it comes to their health benefits. Brown Rice Recipes
Mexican Brown Rice Salad
cooked brown rice (1 cup), 2 ears corn, 2 cans of pinto beans (drain and rinse it), 1 finely chopped red bell pepper, 1 bunch of sliced green onions, 1 small diced jalapeno, 4-tbsp olive oil, 1 tsp cumin, juice of one lime, finely chopped garlic (1 clove), 3 tbsp chopped cilantro, freshly ground pepper and kosher salt, 1 cup of feta cheese
Preheat the grill (medium-high heat). Brush the corns with olive oil. Season them with pepper and salt and grill for about 5-6 minutes until they have nice charred spots. Once it is cool, remove the corn kernels. Now combine brown rice, corn, red bell pepper, beans, green onions and jalapeno in a large bowl. Whisk olive oil, cumin, lime, cilantro, garlic, salt and pepper in another bowl. Fold in the prepared dressing into the vegetables. Top it with crumbled cheese.
Brown Rice Pilaf
one cup of brown rice (long grained), 1 chopped shallot, 1 tbsp butter, freshly ground pepper, kosher salt, 21/2 cups of warm water or chicken broth, 1 clove of smashed garlic, 2 sprigs of thyme, 3 tbsp of chopped flat-leaf parsley, thinly sliced 3 green onions.
Take a saucepan. Add butter and melt it over medium heat. Sauté shallot until they are tender. Now add rice. Stir until the rice is completely covered with butter. Season it with pepper and salt. Add chicken stock, thyme and garlic. Cover and cook for 40 minutes. Remove sprigs of thyme. Fluff with the help of a fork. Garnish with green onions and parsley.
Brown Rice, Basil And Tomatoes
1 cup brown rice, 2 tsp kosher salt, 2 tsp sugar, 1/2 cup rice wine vinegar or champagne, 1 tbsp olive oil, 1 pound diced ripe tomatoes, freshly ground pepper, 1 cup chopped basil leaves.
Boil 21/4 cups of water. Add rice and 1 tsp salt into the boiling water. Simmer for about 30-40 minutes until the water is completely absorbed. Transfer the cooked rice into a bowl. Combine sugar, olive oil, vinegar, pepper and remaining salt in a bowl. Whisk all the ingredients together. Pour the dressing on the rice. Add basil and tomatoes. Mix well. Serve this tasty rice at room temperature.
Shiitake Mushroom Brown Rice
6 shiitake mushrooms (sliced and stemmed), 1 tbsp of sesame oil, 1 cup of brown rice, 1 cup of chicken broth, 2 tbsp soy sauce, ¼ cup sliced scallions and 1 tbsp sesame oil
Preheat the oven (350 degree F). Add 1 tbsp oil in a pan. Once the oil is hot add all the ingredients. Cover and place it in the oven for about 30 minutes. Fluff the cooked rice before serving.
Brown Rice And Coconut Pudding
2 cans of light coconut milk, 3/4th cup brown rice (short-grain), 31/4 cups of milk, ½ cup sugar, 1-tsp of fine salt.
Combine together rice, milk, coconut milk, sugar and salt in a saucepan. Bring it to boil on a medium heat. Cook uncovered. Stir occasionally until brown rice is tender and absorbs all the liquid. Remove the cooked mixture from the heat. Transfer it into a bowl. Divide it among 4 – 6 different bowls. Cool in the refrigerator for about an hour. Serve it topped with banana, brown sugar and a scoop of your favorite ice cream.
