But the beauty of this dish is that pasta is versatile. You can really experiment with a lot of meatless sauces. The recipe below includes the basic pasta cooking too. Basic Pasta Cooking

Take a packet of any pasta of your choice like spaghetti, macaroni, spiral pasta, fettucini, penne, rigatoni or anything that you like. Take about a litre of water and add salt to taste. Once the water is boiled add the pasta and cook till al dante. It should be not completely cooked. Wash with cold water to get rid of extra starch. Keep aside. You can save some water from the cooked pasta for adding to the sauces.

Macaroni Hot Pot

This one is a favourite with kids, potluck parties or a warm homely dinner.

Ingredients

For this recipe, take a packet of boiled macaroni. You will also need chopped veggies- 3 cloves, chilli paste to taste, one small capsicum and 1 onion. You will also need a can of baked beans. Keep a cup of cheese and milk each for making the cheese sauce.

Sauté the garlic, chilli paste and onions in some oil, then add capsicum and cook till soft. Then add the can of baked beans, milk and cheese. Once the sauce is thick then add macaroni. Put in a ceramic dish and then sprinkle cheese and bake till golden brown.

Ingredients

For this pasta soup you will need about 1 kg of tomatoes, which are blanched and pureed, along with about 1/2 packet of spaghetti or fussily. Other ingredients include 2-3 chopped garlic, 10-12 basil leaves, 1/2 cup of chopped carrots, potatoes, zucchini, cauliflower and onions each. You will also need about 2 cups of hot water.

Method

Sauté the garlic in some oil and then add the vegetables. Add the hot water and let the vegetables cook. Finally add the basil leaves along with tomato puree. Add some salt and sugar to season. Serve hot.

This cheesy and spicy mushroom pasta is high on taste and a good way to make your kids eat mushroom.

Ingredients

For making this pasta you will need one packet of cooked fettuccini, 1 packet mushroom (washed thoroughly in hot water), 3-4 spoons of extra virgin olive oil, 3-4 tablespoons of tomato puree, 1 cup of grated cheese, 2-3 cloves chopped garlic and red chillies. Herbs like parsley and thyme are needed for seasoning.

Heat the oil and then add garlic. Then add chopped mushroom, chillies and tomato puree. Then throw in the herbs, pasta and finally sprinkle with cheese. It will be semi dry.

This is a classic Italian recipe that works for a regular meal or even a fancy dinner.

Ingredients

For this classic recipe, you need a packet of al dante penne pasta. Other ingredients needed for the same are chopped and blanched tomatoes (about 1kg), one small onion grated, red chilli flakes, oregano dried, 3-4 garlic cloves, extra virgin olive oil and some parmesan cheese. You should blanch, peel and deseed the tomatoes. Then chop them roughly.

Method

Take a pan and heat some extra virgin olive oil in it, then add the garlic cloves to it. You can chop the cloves or paste them too. Then add the onion paste and cook till golden brown. Add the chopped tomatoes now along with oregano. You can also add fresh herbs like basil or parsley. Once the tomatoes leave their juices and are softened. Throw in the pasta. Add salt, chilli flakes and cheese. Serve hot.

This is a delicious creamy and rich pesto sauce made from basil. Now you ideally need pine-nuts for this recipe, but you can also use walnuts or cashew nuts or even peanuts.

Ingredients

Here are the ingredients that you need. Pasta of your choice (bow, penne, fusilli, etc.), a big bunch of fresh basil leaves (roughly chopped), 1/2 cup of either pine nuts, peanuts, cashew nuts or walnuts, 1/c cup of extra virgin olive oil, 1 cup parmesan cheese (you can also use regular processed if you don’t have parmesan), 4-5 garlic cloves (peeled). Salt and chillies to taste.

In a food processor blend together the basil, nuts, cheese and olive oil along with the garlic cloves. You will get a smooth puree. Add a dash of water if you think that the mixture is not the right consistency. In a pan heat this mixture and then throw in the salt along with chilli flakes (if you want. Then add the pasta. Garnish with more cheese and serve hot.
