Soups are very important dish and it can be served at lunch or at the time of dinner. It is basically a starter dish or an appetizer and it can be made with different fruits and vegetables. Soups are usually very light dish which is easy to digest and also very good for our health as soups does not contains so much of oil or spices. Soups are very much beneficial for us as the food value of the ingredients are completely remained the same. In this article I have shared four unique vegetable soups you can include in your diet.

Cold Apple Soup

The first one is Cold apple soup. It is very much ideal for the summer time because it is made of fruit and fruit is helpful to retain water content of your body. Apple is a very good source of vitamin A, E and K and thus this soup is ideal for all seasons.

Ingredients

Butter 1 table spoon, Green apple 2(medium size), Black pepper powder 1 tea spoon, White wine 1 cup, Salt to taste, Sugar according to taste, Red apple 1 (chopped and required for garnishing)

Method

First remove the skin of green apple and then chop them. Heat butter in a thick bottomed deep pan. Wait for a moment. When it got melted add the chopped piece of green apple and stir continuously. Now add the black pepper powder, salt and sugar. Cook the whole thing in medium heat. Add red wine and stir well. When the mixture get hick consistency and a smooth texture remove it from the flame. Now blend this mixture in a mixer and pour in a bowl. Garnish with the pieces of red apple and refrigerate for 3-4 hours. Serve chilled Cold Apple Soup.

Tip

You can add water instead of red wine. Quantity will be same as red wine.

Chilled Moroccan Tomato Soup

The second one is Chilled Moroccan Tomato soup and it is also ideal for the summer. This soup is little bit different than the contemporary tomato soup. The taste of orange juice and paprika adds a zing in the taste of the soup. The recipe is so simple and very easy to cook. You will definitely love this soup. You can use packaged orange juice instead of the fresh orange juice if the fresh one is not available in the summer.

Ingredients

Tomato Juice 1/3 cup, Orange juice ¼ cup, Tomato 2(medium sized and sliced in to pieces), Celery 1 bunch (chopped),Olive oil 1 table spoon, Garlic 1 table spoon (chopped), Lemon juice 2 table spoons, Tomato Ketchup 2 table spoons, Paprika 1 tea spoon, Salt to taste.

Method

Blend tomato juice, orange juice, tomato pieces and celery together in a mixer. Heat olive oil in a nonstick pan. Now add chopped garlic in to the pan and stir. When it is half fried add the blended tomato mixture in to the pan. Add paprika, Salt and lemon juice. Cook in medium heat for 6-7 minutes. When it got boiled remove it from flame and pour in a serving bowl. Refrigerate the mixture and serve chilled Moroccan Tomato soup.

Chilled Almond Walnut Grape Soup

Chilled almond walnut grape soup is another unique soup which comes with the goodness of fruits. This is also a very easy recipe to try in home.

Ingredients

Sliced bread 8 pieces, Lemon juice 2 tea spoons, Almond 75 gm, Walnut 75 gm, Chopped garlic 1 tea spoon, Olive oil 150 ml, Green and black grapes 150 gms

Method

Make toast of the bread slices and make small pieces from the toast. Blend almond, walnut, garlic and olive oil with water in a mixer. Add lemon juice and refrigerate it for 3-4 hours. When got chilled serve with the toasted bread pieces, almond, walnuts and grapes.

Roasted Pepper Soup

The last one is roasted pepper soup. I have shared the microwave recipe for this one.

Ingredients

Red bell pepper 2(seeds are removed and then chopped), Onion 1 (sliced in to 4 pieces), Garlic 4 cloves, Yellow bell pepper 2 (seeds are removed and then chopped), Tomato 2 (chopped), Chilled water 21/2 cup, Rice oil 2 table spoon, salt and black pepper powder to taste, Fresh shrive 2 table spoon(for garnishing)

Method

Take a ovenproof dish and add onion, garlic, red & yellow bell pepper. Add some rice oil and mix all the ingredients. Roast these ingredients for half an hour in a preheated oven and keep aside to cool. Blend garlic, vegetables, tomato with water in the mixer. Add salt to taste. Now strain the mixture with the help of a sieve and again boil it. Garnish with black pepper powder and fresh shrive. Serve hot roasted Pepper soup.
