Sesame Jaggery Dessert:
Sesame Jaggery desert is a unique type of desert which is made with mainly Date Jaggery and milk. It tastes so nice that you will be a great fan of it.
White Sesame Seed 1 cup, All Purpose Flour 250 gm, Grated Coconut 1 cup, Jaggery as per your taste (use date jaggery for your recipe), Milk 1 liter, Cardamom powder ½ tea spoons, Salt 1 pinch.
Take a thick bottomed pan and boil 1 liter of milk in it. Cook until it reduces in to ½ liter of milk. Take another non stick pan and dry roast the sesame seeds. Keep it aside to become cool. Now mix the grated coconut and jaggery in this nonstick pan. Cook this mixture until the Jaggery melts completely and it turns to a sticky mixture. Check the stickiness after few times when you are cooking by your index and middle finger. Stir continuously unless it will burn at bottom. Add the dry roasted sesame seeds in to it and cook it for 2 minutes. Keep it aside to cool. Add one pinch of salt in to all purpose flour and add water to knead dough. The dough should be a little stiff. Divide the dough in to small balls and make small pockets in to it. Now fill the pockets with the sesame seed and coconut stuffing. Seal it well. Make them round in shape. Again boil the milk and add Jaggery in it. Add cardamom powder and cook for another 5 minutes. Now add the round shaped stuffs that you have made previously in boiled milk and cook until these things are turned soft. When the total mixture get thick remove it from the flame. Serve when it gets cool.
Stuffed Jaggery Bowl:
The second one is an all time favorite of the children in your home named “Stuffed Jaggery Bowl”. This recipe shows at the time very much creativity and also is a delicious one. This dish is ideal for your kids because it is a powerhouse of calories which came from dry fruits and Jaggery that are used in this dish.
All purpose Flour 200 gm, Refined Oil 75 gm, Baking Soda ½ tea spoon, Salt as per taste, Cardamom Powder ½ tea spoon, Dry fruits (Ground Nut, Walnut, Cashew, and Raisin) ½ cup chopped, Jaggery 1 cup (Use Date Jaggery specially for this dish), White Oil for frying, Semolina 50 gm, Sugar 4 table spoon.
Take all purpose flour, sugar, salt as per taste, baking soda, semolina and refined oil in a large bowl. Now mix them well and add water to knead smooth dough. Cover the dough for 1 hour. Now make small balls out of the dough and make bowls out of each ball. You may use muffin moulds for making the bowls. Take the bowls out from the mould and deep fry them in refined oil till they turn golden brown. Now chop the dry fruits finely with a sharp knife and mix with the liquid jaggery to make the stuffing. Fill the fried bowls with this dry fruit and jaggery stuffing. Serve hot Stuffed Jaggery Bowl.
Papaya Delight is a very healthy dessert and it can be made with simple ingredients in your home.
Raw papaya 1 ½ bowl (Grate it before use), Sugar 1 bowl(powdered), Condensed Milk ½ bowl, All Purpose flour and Rice flour (use it as a binder), Refined oil for frying, Ground Nut powder ¼ bowl, Cardamom powder ½ tea spoon, Jaggery 1 bowl (Date Jaggery), Milk 1 ½ bowl, Nutmeg Powder ½ tea spoon.
Take a nonstick pan and pour grated raw papaya in to it. Add powdered sugar in it and cook it in low flame. Stir continuously. When the water gets almost dried from papaya adds cardamom powder and ground nut powder. Separate one bowl of this mixture and keep it aside. Also separate the other portion to remain cool. Add khoya kheer, all purpose flour and rice flour in to it to make dough. You may add a little milk if it is required when you are preparing the dough. Make small balls out of this dough and from each ball of this dough make round shaped chops. Fry them in refined oil. Now boil the milk and the Jaggery together. Add the papaya mixture which was previously made and separated in a bowl. Cook for 3-4 minutes. Now add the fried chops made with papaya and allow boiling. Cook for another inutes and sprinkle nutmeg powder on top. Serve when it get cold.
