Oat and Broccoli Soup

Oat and Broccoli Soup

Ingredients:

3 tbsp oats roasted and powdered
1 cup of broccoli florets
4-5 garlic cloves, minced
3 cups of water
1/2 cup skimmed milk
1 onion, finely chopped
3 tbsp of frozen/freshly steamed sweetcorn
2 drops of oil for sauteing
Salt and pepper to taste

Preparation:

Blanch the broccoli, strain it and reserve the water. Keep a few florets aside and puree the rest. In a pan heat 2 drops of oil and saute the minced garlic and chopped onion. Then pour in the puree, add in the blanched florets and reserved water, pour milk, add sweetcorn, pepper and oats, dissolved prior in 1/2 cup water. Simmer for five minutes and serve hot.

Spanish Oats Omelette

Spanish Oats Omelette

Ingredients:

1 cup(100 gms) of oats
4 egg whites
2 tbsp skimmed milk
1 small capsicum, finely sliced
1 small onion, sinely sliced
1/2 small tomato, finely sliced
2 mushrooms, finely sliced (optional)
1/2 tsp pepper
and salt to taste

Preparation:

Beat a mixture of egg whites with oats, salt, pepper and milk. On a low flame, in a non stick pan pour half the mixture and spread it over to cover the whole pan. Sprinkle capsicum, onion, tomato and mushroom slices on top and press gently. Cover the pan and cook till light golden. Pour the other half of the mixture and cook another omelette. Serve with the vegetable side up. Cut into wedges and serve hot with toasted bread.

Ingredients:

1/2 cup oats
1 grated garlic
1 finley chopped onion
1/2 cup finely chopped mushrooms
2 drops of oil
1 cup skimmed milk
1/2 tsp oregano
and salt to taste

Preparation:

In a non stick pan, heat oil and add onion, garlic and mushroom and saute till tender. Then add milk, oats, oregano and salt. Cook for 3 minutes. Sprinkle some pepper and chilli flakes from above and serve hot.
