Mexican Chicken Stew

Recipe Ingredients

Onion, finely chopped – 1 medium
Garlic, finely chopped – 3 cloves
Dark Brown Sugar – ½ tsp
Chipotle Paste – 1 teaspoon
Vegetable oil – 1 tablespoon
Tomatoes, chopped – 1 can
Chicken Breast – 4
Coriander Leaves – to garnish



Heat oil in a saucepan and add the onions. Cook till they start turning brown, then add garlic and fry for a minute. Add sugar, tomatoes and chipotle paste. Add chicken, spoon the sauce over it, then cover and let it simmer till the chicken is cooked completely. Now take the chicken out and shred using a fork and add to the sauce again. Mix everything together well and garnish with some red onion rings, coriander and serve with rice or tortillas.

Canola Oil – 4 tablespoons
Lemon Juice – 2 tablespoons
Salt – 1½ teaspoons
Oregano, dried – 1½ teaspoons
Ground cumin – 1½ teaspoons
Garlic powder – 1 teaspoon
Chili powder – ½ teaspoon
Paprika powder – ½ teaspoon
Red pepper flakes – ½ teaspoon
Chicken breast, cut into strips – 1½ pounds
Red pepper, julienned – ½
Green pepper, julienned – ½
Onions, green – 4
Onion, chopped – ½ cup
Flour tortillas, warmed – 6
Shredded cheddar cheese, salsa, taco sauce, sour cream and guacamole – to serve

Take a large resealable bag and add all the seasonings along with lemon juice and 2 tablespoons of oil; then add the chicken and seal the bag. Shake the bag to coat the pieces of chicken completely with the mixture; then refrigerate it for 4 hours. Take a large skillet and heat the remaining oil. Sauté the onions and peppers till they become tender and crisp. Remove from the pan and then add the marinated chicken in the same pan and cook for 4-5 minutes over medium high heat till it does not look pink anymore. Add the pepper and onions to the pan again and heat thoroughly. To serve, spoon the filling inside a tortilla folded in half and top with taco sauce, sour cream, guacamole, salsa and cheese.
