Plain Chicken Stew Recipe
It is perhaps the easiest and is the classical chicken stew recipe.
To prepare plain chicken stew you will need about 500 grams chicken leg pieces, 2 carrots, 2 potatoes, 2 ribbed gourd, 12-15 French beans, 1 onion, 2 ½ inch ginger, 5-6 cloves of garlic, 7-8 black peppercorns, 1 tablespoon clarified butter, 1 bay leaf, 1 cinnamon stick of about an inch long, 2-3 green cardamoms, 3-4 cloves and salt to taste.
Cut chicken into big pieces. Wash, strain the water and rub some salt over it and keep it like that for at least 10-15 minutes before starting cooking. Peel carrot, potato and ribbed gourd. Cut them in big pieces. Cut each French bean into 2 pieces, slit them and keep them separately. Chop onion, garlic and ginger and keep them aside.
Take a medium sized cooking pot and add water in it. As the water comes to boil add the chicken legs, carrot, potato and ribbed gourd. Add salt. Keep boiling with the lid on to soften the chicken and vegetables. Boil them on low flame because slow cooking on low flame enhances the taste. After sometime, check whether the chicken and vegetables are soft with the help of a fork. When they are soft enough remove the pot from flame. Now take a pan and heat it. Add 1 tablespoon clarified butter, let it melt and then lower the flame. Add bay leaves, cinnamon, cardamom and cloves and black pepper seeds. Let it splutter. Then add the boiled chicken and vegetables. Add French beans and boil for further 5 minutes. Add salt to taste. Remove it from heat. Serve hot chicken stew with hot steamed rice.
Lemony Chicken Stew
This stew is easy to prepare and has a tangy taste.
Chicken breast 500 grams, 1 cucumber, 1 potato, 1 carrot, 1 bell pepper, broccoli,1 lime, ginger, onion, garlic, olive oil, corn flour, sugar, and salt.
Cut chicken breast into small pieces; peel cucumber and slice them into thin sections; peel carrot and potato and cut into fine round slices. Cut broccoli into small pieces. Slice onion, make julienne of ginger and mince garlic. Squeeze lime and extract the juice. Make lime zest. Mix 1 tablespoon corn flour in a cup of water.
Pour 1 tablespoon olive oil in a pan and heat it. Add minced garlic and stir well. Add chicken breast pieces and keep stirring. Add salt and water in the pan and cover it with a lid. Let it boil keeping the lid on so as to soften the chicken pieces. When the chicken pieces are soft add rest of the vegetables. Boil it further till cooked. Add the corn flour mixed in water to thicken the consistency. Cook it for further 1-2 minutes. Before removing it from heat, add lemon juice and lemon jest in the stew. Add salt and pinch of sugar to taste and stir well to mix everything.
Serve this testy stew with noodles or plain pasta.
