Egg With Eggplant
The first recipe is Egg with Eggplant which is a very simple but tasty recipe. You can easily try it in your lunch. This dish comes with the goodness of egg with the goodness of eggplant.
Egg 2, Eggplant/ brinjal 1 (Large), Ginger paste ½ table spoon, Onion 3 table spoons (Chopped), Garlic 1 tea spoon (chopped), Turmeric powder ½ tea spoon,d Chili powder ½ tea spoon, Salt to taste, Green chili 1 tea spoon (chopped), Raisin 2 tea spoon, Garam Masala Powder ¼ tea spoon, Refined oil 3-4 table spoon.
How To Make Garam Masala Powder
Dry roast 2 cardamom, 1 cinnamon and 4 cloves and then grind it in fine powder. Store it in airtight container.
Boil the eggplant well and remove the skin from it. Heat oil in a nonstick pan and add chopped garlic. Add 2 tea spoons of chopped onion, ginger paste, turmeric powder and chili powder. Sauté the spices for 4-5 minutes and add the boiled eggplant. Mix the boiled eggplant with spices well and cook it for 5 minutes. Boil the egg and cut in to pieces. Add these pieces with the eggplant and cook for few minutes. Add chopped green chili and salt to taste. Remove it from flame. Heat oil in another nonstick pan. Fry the rest of the chopped onions and raisins. Mix it with the eggplant well and serve hot Egg with Eggplant.
Green Egg curry is another recipe to try out. It can be served with rice or bread and it is a really delicious dish indeed.
Egg 6, White Oil 2 ½ table spoons, Butter/ Ghee 1 table spoon, Salt to taste, Turmeric powder ½ tea spoon, All purpose flour/corn flour ½ tea spoon, Onion 1 (large), Bay leaves 2-3, Garlic 2 cloves, Coriander leaves 50 gms (chopped), Green chili 2, Sugar and salt to taste, Curd 2 table spoon (bitten).
Boil the egg in cold water adding a little sat in to it. Make a paste with salt, turmeric powder, corn flour with a little water. Cut the boiled eggs in to two equal halves. Apply the paste which was previously made on the open sides of the eggs and join the halves with the other. Heat butter in a pan and fry the eggs. Grind onion and garlic together. Also make a paste of green chili and coriander leaves. Heat oil/ghee in a nonstick pan and add bay leaves. Now add the green chili and coriander paste. Add salt, sugar and curd. Bit the curd before add into the curry. Take a micro safe serving dish and spread half of the cooked mixture in it. Now place the fried eggs on it. Garnish with chopped coriander and green chili. And then pour the remaining spices on it. Now heat it for 2 minutes in microwave before serving.
