If you are planning to roast chicken for dinner, there are many ways in which you can do so. Here are some healthy ways of roasting chicken.
Basic roast chicken
The perfect roast chicken has a crunchy skin and tender meat inside. Trim excess fats from the chicken, discarding the neck. Rinse it properly under cold water and pat it dry with the help of paper towels. Season the cavity properly and squeeze one lemon’s juice over the chicken. Rub it in properly and place the lemon wedges in the chicken cavity. Tie the legs together and brush with oil. Season again and roast for an hour.
Roast lemon chicken – version one
Mix the juice of a lemon, some crushed garlic cloves, olive oil, some potatoes, salt, pepper and chicken nibbles in a bowl. Arrange it on a roasting pan and place lemon wedges over the lot. Sprinkle a generous amount of rosemary on top. It will be done in about 45 minutes.
Roast lemon chicken – version two
Finely grate the rind of lemon and mix it with lemon juice, garlic cloves, olive oil and chopped rosemary leaves. Place chicken in the marinade and coat properly. Transfer to roasting rack and spoon over the remaining mix. Season correctly. Roast for 40 minutes and it’s ready.
Mustard, lemon and rosemary roast chicken
In the food processor, toss together Dijon mustard sauce, olive oil, roughly chopped rosemary and parsley leaves, sliced garlic cloves and lemon juice. When the paste has combined properly, season it with pepper and salt. Add this mixture to chicken pieces and coat properly. Refrigerate it overnight. On a roasting rack, arrange the chicken pieces and pour some of the dressing on top again. The chicken will be ready in 50 minutes.
Roast chicken with herbed tomato rice
Season chicken thighs before cooking it in a heavy bottom pan. Remove chicken when done and sauté onion, thyme, basil, tomato puree, rice and stock. When it starts boiling, remove from heat and arrange in pan. Place chicken on the rice base and roast for 35 minutes.
Spiced orange roast chicken
Marinade the chicken thighs in orange juice, garlic, coriander, honey, olive oil, turmeric powder and cumin powder. Cover it properly and allow it to marinate for an hour in the fridge. Arrange on the roasting rack and place orange slices on top and roast for 45 minutes. Serve with finely chopped chives as garnish.
Chicken with 40 garlic cloves
Place a lemon wedge in the chicken cavity along with some bay leaves. Rub the chicken with olive oil and rosemary leaves. Place in a rack on the stovetop and add garlic, wine and stock till it starts boiling. Cover it and roast in the over for about an hour. Remove the lid and roast for a little more time. The chicken is ready to be served.
Roast chicken with pistachio and cranberry
Make the stuffing for the chicken by sautéing onions, dried cranberries, garlic and pistachios. When the mix is cooked, cool it and add breadcrumbs, parsley and egg to it along with salt and pepper. Spoon this stuffing inside the chicken cavity and brush the chicken with oil. Roast the chicken for an hour and 15 minutes. Serve with parsley and some stuffing on the side.
Moroccon style roast chicken
Cook some cous cous rice in stock till the grains separate. Saute garlic, onion, cumin, dates and coriander in a pan. Add this mix along with pistachios to the cous cous. Spoon it into the chicken along with a stick of cinnamon. Make a glaze with honey, salt, pepper, cinnamon powder, oil and cumin powder. Brush this over the chicken before roasting it for one hour.
30 minute roast chicken
Saute chicken slightly in a pan with butter and oil mix. If you like potatoes then cook them slightly too before arranging with the chicken on the roasting rack. You can also add some garlic and shallots. Squeeze a generous amount of lemon juice on top of the chicken along with some tarragon. Roast for about 30 minutes.
